UNA VEZ TRANSCURRIDO ESTE PERIODO SE DESPULPAN EN SECO Y SE VUELVEN A FERMENTAR POR 40 HORAS MAS EN BOLSA PLASTICA. DESPUES DE ESTAS 80 HORAS DE FERMENTACION, LOS GRNOS DESPULPADOS SE LAVAN Y SE SECAN AL SOLO EN PATIOS POR APROXIMADAMENTE 12-A 15 DIAS HASTA OBTENER LA HUMEDAD IDEAL
