The Process
Ndima-ini’s coffee is grown in rich red volcanic soils, at elevations of around 1,600 meters above sea level, and benefits from an average annual rainfall of 1,100mm. The region lies on the southern slopes of Mt. Kenya, where the climate and altitude contribute to the coffee’s dense structure and layered flavors. Cherries are handpicked and processed using the fully washed method, with water sourced from the Ragati River. After fermentation, the coffee is washed and graded by density, then sun-dried on raised beds to ensure even drying and preservation of flavor.
